Spicy Turkey Meatballs - Healthy Batch Cook Recipe


This spicy meatball recipe is most certainly kid approved.  My two devoured their portions, demanded seconds, devoured that too then asked if we could have them again the next day!!  They are a little more time consuming to prepare than some of my other recipes but for that result it's so worth it.


Ingredients and Tools:

For the Meatballs:
2 kg Turkey Mince £7.56
Half a loaf of Old Bread
450g Cheese £2
4 Eggs 31p

For the spicy Sauce:
Chopped Tomatoes 84p
Cream 89p
Lemon Juice 10p
Curry Powder 22p
Paprika 23p
Cumin 23p

Total = £12.38
Makes 18 portions = 69p per serving

I'm starting with the sauce, add the chopped tomatoes to a large pan.


Then the curry powder, about 1/4 of a tub.


About half a jar of paprika.


And some cumin - about a quarter of a jar.


Then add a good squirt of lemon juice.


Give it a stir and bring it to the boil.


Then take it off the heat and stir in the cream.  

Taste and adjust the spices if necessary.


Instead of buying breadcrumbs save old bread and crusts and whizz them in a food processor. 


Put the mince in a big bowl.


Add the breadcrumbs and the eggs.


Grate about half a block of cheese and add that too.


Mix it all up with your hands - this photo is taken after I'd made about half of the meatballs.


Use your hands to form little balls of the mixture.  You can use an ice cream scoop to get the size consistent but I find it easier to use the palms of my hands.


Pop the meatballs in the oven on gas mark 5 for about 45 minutes.

Check they are cooked through before serving smothered in spicy sauce.


Little Miss asked for this with spaghetti.  It would also work well with other types of pasta or a jacket potato, or what about a sandwich!?
