Tomato and Roasted Pepper Soup Recipe - Budget Batch Cook


Roasted peppers add a delicious dimension of flavour to an otherwise plain and simple tomato soup.  


Ingredients and Tools:
3 Tins Chopped Tomatoes 84p
1kg Red Onions 64p
Peppers £1.19
Garlic Bulb 16p

Total = £2.83
Makes 12 servings = 24p  per serving

Mince the garlic.


Dice the onions and fry them with the garlic.


Add the onions and garlic to a large pan with 3 tins of chopped tomatoes.


Roughly chop the peppers and roast them in the oven.


Add the peppers to the pan and bring it to the boil.


Blend the soup and tub it up for the freezer.
